For situations like this, you have to apply the power pedal technique. This technique is relatively simple. To execute this, just pull one pedal (one which feels more natural for you) up so it is about two-thirds from the top of the pedal rotation. Then put your foot on that pedal and stand on it. This would naturally push you up and onto your saddle, your other foot could find its pedal easily. Now you are completely in control of your bicycle and can accelerate and shift as necessary.
